Wallace Mua

Inspired by his Samoan roots, where family gatherings and shared meals are treasured, Chef Wallace discovered his passion for cooking early on. He brings his 20 years of experience to Trivet with his 'elaborately simple' cooking style.

Chef Wallace has combined his extensive expertise in kitchens across New Zealand and France, his personal journey, and the concept of a multicultural Aotearoa into an exclusive culinary experience. At Trivet, each dish tells a story, blending flavours and techniques from around the world with the finest local produce New Zealand has to offer. His menu is approachable, featuring familiar flavours that honour heritage with a touch of unexpected combinations.

Starting as a dishwasher at the age of 15, he climbed the culinary ladder to become one of New Zealand's top chefs. After perfecting his culinary skills and techniques in Paris and Marseille for six years, Chef Wallace returned to New Zealand, where he worked at renowned restaurants like Soul, Euro, and Kingi.

Chef Wallace had the honor of being the only Kiwi chef selected to tour with the All Blacks in France during the Rugby World Cup 2023. He ensured food standards were met at each tour location and worked with local chefs and nutritionists to execute the team menus, keeping the players fueled and nourished.

Chef Wallace has now joined JW Marriott Auckland as Executive Chef, leading the development of the hotel's new culinary offerings, including Trivet and two upcoming venues, while bringing his international skills and passion for food to life.
